Description

History
The Il Sassolo winery, established in 1972 by the Mannelli family, is located in Santa Cristina a Mezzana, in the heart of the Carmignano wine region. With 14 hectares of land, 6 of which are dedicated to vineyards, the company produces wines that reflect the tradition and quality of the territory, including Vin Ruspo, a typical rosé of the region.

Grapes

  • Sangiovese 90%
  • Cabernet Sauvignon 10%

Production Method
The grapes are hand-harvested and undergo “white” fermentation at controlled temperatures of 15-17°C in stainless steel tanks. The wine then ages for about 3 months in steel, followed by additional bottle aging, to preserve the freshness and aromatic qualities of the final product.

Tasting Notes
Visually, it presents a pale pink color with violet highlights. The nose reveals floral and fruity aromas, with hints of white flowers, wild strawberries, and dog rose. On the palate, it is direct and fresh, with a balanced and pleasant finish.

Pairing Suggestions
It pairs perfectly with typical Tuscan dishes such as ribollita or pappa al pomodoro. Also excellent with cured meats, white meats, and as an aperitif.
