Description
History
Historical company of the Chianti Classico, since 1971, it has seen the succession of different properties. At the beginning it was a hectare and a half cultivated with passion by two Londoners, husband and wife, John and Palmina Dunkley. The most historic vineyard (500 meters above sea level) was located right in front of the house garden. From then to today the hectares of vineyards have grown to 22, mainly Sangiovese is cultivated, with some Merlot vines. All campaign operations are dictated by the rules of organic viticulture and supported by biodynamic processes. The current owners, since 2011, are Jews of German origin, born in Russia after their parents had moved there to escape Nazi persecution.

Production method
Fermentation takes place in Nomblot non-vitrified cement tanks and maceration lasts 15 days. The aging is in Nomblot non-vitrified cement tanks, where it will remain for 36 months.
At the end of the refinement, the mass will pass again for another 3 months in non-vitrified cement vats
for tartaric stabilization and spontaneous clarification, before being bottled. It stays in the bottle for another 6 months.

Tasting notes
Intense ruby red colour. On the nose small red fruits such as raspberries, strawberries, black cherries, currants and cherries, floral notes of violets and violets; the spicy, earthy and balsamic notes are also pleasant. In the mouth it is complex, fine, elegant, it releases all its aromatic energy.
Possible combinations
Pairing with red meat dishes, grilled, mature cheeses, mushrooms and Florentine steak.
