History
The Pepe family is a family historically linked to the Irpinia area, which for many generations has invested and is committed to enhancing the area through the production of wines. Angelo Pepe worked hard to create today’s reality, creating the Tenuta Cavalier Pepe, which today is a cellar, winery, restaurant and bed & breakfast. The name Cavalier Pepe derives from the fact that the then President of the Republic Oscar Luigi Scalfaro in 1998 appointed Angelo Pepe “Cavaliere della Repubblica” for the work merits demonstrated in the field. Today the company covers about 60 hectares of land and 11 hectares of olive groves; the cultivated varieties are mainly the historical ones such as Aglianico, Fiano, Greco, Falanghina and Coda di Volpe. The lands are within 3 DOCGs, Fiano di Avellino, Greco di Tufo and Taurasi.

Production method
The vineyards from which the grapes for this wine come are located on clayey soils with volcanic sediments due to their proximity to Vesuvius. The grapes are harvested by hand in crates when they reach full maturity, and are immediately transported to the cellar and destemmed. Fermentation takes place at a controlled temperature and maceration “on the skins” lasts for about 20 days. After fermentation, the wine obtained is aged in oak barrels for 12 months, in cement tanks for another 24 months and finally for at least 12 months in the bottle before being placed on the market.

Tasting notes
The wine has a dark and impenetrable ruby red color with garnet reflections. The scent is intense and the bouquet of aromas varied: red fruits and ripe berries, blackberry and cherry jam, blueberry and mulberry, with notes of eucalyptus, flint, and spices such as licorice and chocolate, all perceived in a very elegant sequence . Soft, deep, warm in the mouth with elegant tannins and balanced acidity.
Possible combinations
“Opera Mia” masterfully accompanies second courses of savory and even spicy meat, or game and game. Also perfect on a platter of aged cheeses. Given the great complexity and elegance, it also lends itself to being an excellent meditation wine.
