Description
History
In 1991, Jean-Pierre Guyon took over the family business, which had previously been run by his father since 1953 and by his grandfather since 1938. Subsequently, his brother Michel joined him. Since 2015, Jean-Pierre and his wife Isabelle have taken over the reins of the company. The property has grown to cover 9 hectares of land following the purchase of new parcels in both the Côte de Nuits and the Côte de Beaune. Since 2012, the company has been certified organic and some biodynamic techniques are used, such as the use of the lunar calendar for work in the vineyard and for bottling. Jean-Pierre’s perfectionism and his search for the essence of the terroir are reflected in the cellar, where every decision is made with attention to the potential of the wine, the particle, the yield and the characteristics of the appellation and vintage, with the aim of preserving the peculiarities of the vintage and of the corresponding terroir.

Production method
In Burgundy, the Pinot Noir winemaking process follows a strict disciplinary to enhance the characteristics of the grape. The grapes are harvested manually, with selection in the vineyard, followed by pressing and fermentation in oak vats for about 10-15 days. Aging from 10 to 14 months in 1 year old oak barrels, of which 20% are new.

Tasting notes
Garnet red colour. Intense aromas of lively red fruits spread on the nose, together with a predominant note of blackcurrant. In addition, light smoky and vanilla nuances are perceived. On the palate, this highly refined wine reveals soft and harmonious tannins, which blend delicately.
Possible combinations
It lends itself perfectly to accompany red meats, mature cheeses and mushroom-based dishes.
