History
Company as unique as the terroir from which its fame derives: rich in stones and watered by the Arno, which guarantees significant temperature ranges in Summer and the presence of mists in Autumn, favoring the development of noble rot on the bunches left to overripe. Riesling, Sauvignon Gris, Semillon and Chenin blanc thus find their preferred environment, guaranteeing results of absolute importance in terms of freshness, minerality and structure right from the entry wine, Podere Sassaie, passing through the three monovarietals, and finding the absolute pinnacle in Pourriture Noble. Under the management and ownership of Alessandro Fonseca, the company has moved between organic and biodynamic regimes since the beginning.

Production method
The wine derives from the experience gained from the production of Pourriture Noble and the familiarity acquired with French blends. The grapes are harvested at different times depending on the achievement of the specific ripeness. The vinification is then traditional in white, with aging of about 6 months on its fine lees.

Tasting notes
Intense straw yellow colour. On the nose the wine is aromatic and intense, with typical hints of tropical and yellow-fleshed fruit, grapefruit, broom, aromatic herbs, minerality and balsamic hints. On the palate the wine has a good structure with character and elegance on the palate. The finish is characterized by a pleasant freshness and fruity notes.
Possible combinations
Podere Sassaie is perfect as an aperitif, especially on warm summer or spring evenings. In combination it is capable of enhancing dishes based on fish and shellfish, raw fish and sashimi, or delicate first courses. Also excellent on some cheeses. Highly recommended for those who want to try an Italian product made from grapes typically grown in France.
