History
Philipponnat is one of the oldest Champagne houses, with a history dating back to 1522. Located in Mareuil-sur-Aÿ, it is renowned for its expertise in Pinot Noir vinification, crafting Champagnes of great personality and elegance. The maison’s philosophy focuses on traditional winemaking and extended aging to enhance the grape’s quality and the uniqueness of its terroir.
Grapes used
100% Pinot Noir, sourced from vineyards in Montagne de Reims and Mareuil-sur-Aÿ, areas particularly suited for growing this variety.
Production method
After gentle pressing, the must ferments in stainless steel, with a small percentage aged in oak barrels to add complexity. The second fermentation takes place in the bottle following the Méthode Champenoise, with at least 5 years of aging on the lees before disgorgement, giving the wine depth and richness.

Bright golden yellow color with a fine and persistent perlage. The nose reveals elegant aromas of red fruits, candied citrus, and spices, enriched by delicate toasted notes. On the palate, it is structured and powerful, yet perfectly balanced by a vibrant freshness. The finish is long, mineral, and refined.
Possible pairings
Perfect with refined seafood dishes such as tuna or salmon tartare, oysters, and shellfish. Also excellent with white meats, foie gras, and aged cheeses. An outstanding choice as a meditation Champagne as well.
