Description
History
Jérôme Galeyrand is a winemaker based in Gevrey-Chambertin, in the Côte de Nuits, Burgundy. With 5.25 hectares of vineyards, he primarily cultivates Pinot Noir and Chardonnay following certified organic practices and biodynamic methods. The “La Justice” parcel was planted in the 1960s on well-draining sandy soils interspersed with alluvial pebbles, located east of the D974.

Production method
- Viticulture: Certified organic cultivation (Ecocert, 2019) with biodynamic methods; short cordon de Royat and Guyot pruning.
- Harvest: Hand-picked.
- Vinification: No added sulfites during vinification; spontaneous fermentation with indigenous yeasts; 15-20% whole cluster inclusion; punchdowns and a few pump-overs during fermentation.
- Aging: 12-14 months in barrels, 20-30% new; no fining and light filtration if necessary; total sulfur of 30-45 ppm at bottling.
Alcohol content
- 13.5% vol.
Tasting notes
- Color: Medium ruby red.
- Aroma: Broad and complex, with notes of dark fruit, flowers, and a subtle spicy component.
- Taste: Full and silky, with velvety tannins and a long, fragrant finish.
Possible pairings
Pairs perfectly with red meats, game, and aged cheeses. Also excellent with dishes featuring mushrooms and truffles.
