History
The largest volcano in Europe is the place where the brothers Diego and Alberto Cusumano have chosen for their challenge: to create wines that are able to express the quality and character of a unique territory. After years of research in the area, in April 2013 the unrepeatable opportunity presented itself to acquire the first three districts on the northern slope of Etna. An ever-evolving project, which began with the reconstruction of the traditional dry-stone walls of the terraces of Guardiola, a district whose astonishing beauty embodies the motivation and inspiration which gave its name to the entire project: Alta Mora. The cellar was designed to have the utmost respect for the grapes and their integrity, allowing for considerable energy savings thanks to the natural thermal insulation and the use of energy from biomass. Made with natural local materials such as lava and earthenware, it integrates perfectly with the uncontaminated nature of the surrounding area. Cool in summer and warm in winter.

Production method
The Alta Mora Etna Bianco 2021 Cusumano is a white wine produced on the slopes of Etna, in Sicily, using a modern and ecological production method. The grapes, mainly Carricante and Catarratto, are harvested by hand and carefully selected to guarantee the highest quality. The vinification takes place in stainless steel, without the use of selected yeasts, to preserve the original expression of the grapes. The wine is then aged in the bottle for a few months before being marketed.

Tasting notes
Straw yellow color with golden hues. The mineral, slightly smoky sensations, aromatic herbs, flint, white fruits and white pepper immediately arrive on the nose. In the mouth it is fresh, soft, balanced, energetic, with a persistent and savory finish.
Possible combinations
In combination it is ideal with fish appetizers, including smoked ones, fish soups, tartare, sushi and sashimi and steamed shellfish.
