Description
History
Jérôme Galeyrand established his domaine in 2002 after gaining experience working with various winemakers in Burgundy. Located in Gevrey-Chambertin, the domaine spans approximately 5 hectares, focusing on wines that authentically express the terroir and character of Pinot Noir. Since 2019, viticulture follows organic practices certified by Ecocert, with biodynamic methods applied in the vineyard.

- 100% Pinot Noir.
Production method
- Harvest: Handpicked with careful selection of grapes.
- Vinification: No added sulfites during vinification; 15-20% whole cluster inclusion; 4-8 day pre-fermentation cold maceration; spontaneous fermentation with indigenous yeasts, involving pump-overs and occasional punch-downs.
- Aging: 12-16 months in French oak barrels, 20% new; no fining and light filtration if necessary; total sulfur dioxide of 30-45 ppm at bottling.

Tasting notes
- Color: Bright ruby red.
- Aroma: Scents of fresh red fruits, such as raspberry and cherry, with floral notes and a hint of sweet spices.
- Taste: On the palate, it offers a silky structure with fine tannins and lively acidity; the finish is long, with persistent mineral and fruity notes.
Pairing suggestions
Pairs perfectly with red meat dishes, such as beef tenderloin or roasted lamb, game, and aged cheeses. Also excellent with French cuisine dishes like coq au vin or boeuf bourguignon.
