Description
History
The history of this project was born from the dream of four winemaker friends (Dylan Warren, Simone Salamone, Luigi Scarano, Simone Zemella) to revalue an ancient Tuscan grape variety: Ansonica. This grape has evolved over hundreds or perhaps thousands of years as a vine that loves proximity to the sea and the wind; for the four winemakers the first challenge was to identify the right plot located near Capalbio, in southern Tuscany. The name Formiche derives from the fact that there are some islands off the coast of Monte Argentario that have this name and also testifies to the well-known industriousness of this animal which is also a similarity with the teamwork of these professionals.

Production method
The vineyard, planted in 1993 on Pleistocene red sands and marine deposits, uses the double guyot system with a density of 4500 vines per hectare and a yield of 50 quintals per hectare. The harvest takes place between the end of August and the third week of September. The vineyard is managed with alternating spontaneous grassing and treatments based on copper, sulfur and herbal teas. In the cellar, the grapes undergo soft whole bunch pressing, with the start of fermentation in steel and used barriques via pied de cuve. The different harvests are assembled, refined on the fine lees and bottled without fining and with light filtration.

Tasting notes
This wine shows a brilliant color and golden nuances. On the nose, notes of ripe fruit, citrus and light spicy nuances emerge. On the palate, it is elegant and fresh, with a good structure and a persistent minerality that recalls the terroir.
Possible combinations
This wine pairs perfectly with fish, shellfish and seafood dishes. Excellent with light appetizers, fresh cheeses and vegetable risottos. Also ideal with chicken and white meat dishes.
