History
Fontodi has been owned by the Manetti family since 1968, who comes entrepreneurially from the famous terracotta sector. The decision to also invest in wine and specifically in the Chianti Classico of Panzano derives precisely from this strong bond with the Tuscan territory and from the desire to enhance the quality production of the region’s excellences, especially Sangiovese. The company is certified organic and extends over 170 hectares of land of which just over 80 are planted with vineyards. All agriculture practiced follows principles of respect for the vineyard, the environment and nature and sustainability is the watchword in Fontodi: we try not only to avoid in the most categorical way the use of chemical and harmful products for the health of the environment, but rather to use material coming from the company itself as much as possible. For example, the vineyards are fertilized using a compost of pruning residues and manure that comes from the internal Chianina breeding. The cellar is very modern and develops vertically in order to exploit the force of gravity to carry out the various winemaking phases which allows us to maintain greater integrity of the fruit and obtain “healthier”, fragrant and intense wines.

Production method
The grapes, mainly Sangiovese, are harvested by hand and carefully selected to guarantee the highest quality. The process begins with natural fermentation using native yeasts and a maceration period in stainless steel containers lasting more than three weeks. Subsequently, the wine is left to mature in barriques and French oak barrels for 24 months.

Tasting notes
Brilliant ruby red colour. On the nose, fruity and spicy aromas stand out, with a subtle floral hint of violet. In the mouth it is full-bodied, warm and penetrating, with a distinctive, savory taste characterized by mineral notes. The finish is persistent and of notable intensity.
Possible combinations
In combination it is excellent with first courses with meat sauce, even well-structured ones, or with red meats in general. Also excellent with selections of medium-aged cheeses.
