Description
History
Fontodi is a winery owned by the Manetti family since 1968. Their decision to invest in wine and, in particular, in Chianti Classico di Panzano, comes from their strong connection with the Tuscan territory and the desire to enhance the quality production of the region’s excellences, especially Sangiovese. The company is certified organic and practices sustainable agriculture, avoiding the use of chemicals that are harmful to the environment and trying to use as much material as possible from the company itself. The cellar is modern and develops vertically, exploiting the force of gravity to obtain “healthier”, more fragrant and intense wines.

100% Sangiovese
Production method
After the harvest, the grapes are destemmed and pressed and then placed in stainless steel containers, where they ferment with natural yeasts present on the skins for about two weeks with frequent punching down. The wine is then aged in French oak barriques from Allier and Troncais for 24 months and then rests in the bottle before being sold.

Tasting notes
Intense ruby red color, with a garnet edge. Notes of ripe red fruit, cherry, ripe berries, slightly wilted violets, herbaceous hints, toasting spices, coffee, black pepper and cloves. In the mouth it is lively, enveloping and ample with great acidity, elegant but lively tannins and an underlying minerality. Decidedly long and fruity finish, with hints of spices.
Possible pairings
Fontodi is a great classic Chianti that has managed to carve out a large slice of admirers over the years thanks to the quality expressed in the glass and its rigorous attention to respecting the principles of organic and eco-sustainable agriculture. For these reasons too, it becomes a wine to be appreciated by the glass, for lovers of Sangiovese di Panzano. It is excellent when paired with first courses with meat sauce, even well-structured ones, or with red meats in general. It is also excellent with selections of medium-aged cheeses.
