Description
History
The SaintGybryen wine cooperative was founded on September 14, 1950, through the union of 11 vignerons from Cramant and neighboring areas, with an initial vineyard area of 18 hectares. In 1977, the SaintGybryen brand was created, aiming to produce high-quality Champagne primarily using Chardonnay grapes from the Grand Cru vineyards of the Côte des Blancs.

Production method
- Harvest: Manual harvesting of grapes in the Grand Cru vineyards of Cramant.
- Vinification: Alcoholic fermentation in temperature-controlled stainless steel tanks; malolactic fermentation completed.
- Aging: Minimum of 24 months on the lees, followed by at least 3 months of rest after disgorgement.
- Dosage: Brut, with a dosage of 10 g/l.
Alcohol content
- 12.5% vol.
Tasting notes
- Color: Bright straw yellow with greenish highlights.
- Perlage: Fine and persistent.
- Aroma: Delicate, with notes of white flowers such as linden and hawthorn.
- Taste: Fresh and floral, with flavors of linden and hawthorn, accompanied by pleasant minerality and good persistence.
Possible pairings
Ideal as an aperitif, it pairs perfectly with fish dishes, seafood, and shellfish. Also excellent with fresh cheeses and light poultry-based dishes.
