Description
History
The Sadi Malot family, independent winemakers located in Villers-Marmery, cultivate about 10 hectares of Premier and Grand Cru vineyards in the Montagne de Reims. Since 1982, they have employed the solera method for their reserve wines, adding complexity and depth to their cuvées.
Grapes used
- 40% Chardonnay
- 60% Pinot Noir
Production method
- Blend: 50% current vintage wines and 50% reserve wines from a solera started in 1982.
- Vinification: Full malolactic fermentation in stainless steel tanks; aged for 36 months on lees without fining.
- Dosage: Brut, with 6 grams of sugar per liter.
Alcohol content
12.5% vol.
Tasting notes
- Color: Straw yellow with golden highlights; fine perlage.
- Aroma: Scents of ripe fruits like mirabelle plum, peach, and apricot, with subtle floral notes and hints of spices and toasted bread.
- Taste: Balanced between the creaminess of Chardonnay and the structure of Pinot Noir; dense and creamy texture, with great freshness and a slight saline note.
Pairing suggestions
Ideal from aperitif to dessert; particularly expressive with dishes like turbot or chicken in cream sauce.
