Description
History
Frédéric Savart is a talented vigneron from the Montagne de Reims, known for his dedication to quality and artisanal approach in producing his Champagnes. The “Éphémère 018” cuvée is born from the collaboration with Drémont Père & Fils, selecting exceptional parcels in the Grand Cru villages of the Côte des Blancs and the Montagne de Reims.

- 26% Pinot Noir
Production method
The grapes come from Grand Cru vineyards located in the communes of Cramant, Avize, Oger (Chardonnay) and Bouzy, Ambonnay (Pinot Noir). Spontaneous fermentation is followed by aging in wood and a rest on the lees for at least 60 months, giving the wine depth and complexity. The dosage is Extra Brut, with 3 g/l of sugar, enhancing the purity and minerality of the wine.

Tasting notes
In the glass, it shows a bright straw yellow color, crossed by fine and persistent bubbles. On the nose, it reveals aromas of citrus, white peach, with iodized and mineral sensations. On the palate, it is tense and satisfying, deep and intense, refined and fine, with a finish characterized by vibrant freshness, chalky and mineral.
Possible pairings
Perfect as an aperitif, it pairs wonderfully with fish dishes, shellfish, and fresh cheeses. Also ideal with sushi and sashimi, thanks to its freshness and minerality that enhance the delicate flavors of seafood.
