Description
History
Roger Pouillon & Fils is a champagne producer classified as Récoltant-Manipulant located in Mareuil-sur-Aÿ, in the Val-de-Marne. The company as we know it today was founded in 1947 by Roger Pouillon, initially dedicating himself to the production of Champagne from his own vineyards in Mutigny.
Today the descendants of the James and Fabrice Pouillon family have expanded their vineyard park to own about fifteen hectares in 12 different villages, an element that allows the creation of champagne by combining different blends and terroirs. For several years, the company has opted for the use of organic products to protect the vineyard and respect the environment, in order to obtain Champagne that best expresses the Terroir.

Production method
It is produced according to the so-called methode champenoise or classic method, a method in which the wine undergoes two different fermentations: the first, the alcoholic one (which it shares with the rest of the wines) takes place in vats for fermentation; which in this case is partially made in steel and barrel; the second instead takes place directly in the bottle and ensures that during this second procedure, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles when uncorked); in this case the refinement is continued for at least 24 months sur lies.

Tasting notes
Straw yellow color with amber hues, fine and delicate perlage. The nose is particularly delicate, interweaving fruity notes with more mineral and spicy nuances. On the palate, however, it is sublimely pleasant, with a very creamy bubble and a long and savory finish.
Possible combinations
Excellent as a classy aperitif, it can also be combined with cooked or raw fish appetizers, sushi, white meats and/or cheese platters. Also excellent with lasagna and slightly fatty first courses.
