Description
History
Located in Damery, in the heart of the Valle de la Marne, this small artisan recoltant has been active for over 5 generations, but has only recently emancipated itself from the status of mere conferrer given that until the 90s the grapes were mainly sold to a well-known Maison and only a residual part destined for the production of wines destined for friends and relatives as well as for historic family allocations to Parisian customers. The management of the vineyards is carried out in “lutte raisonée” or rather in non-certified “bio”, and in any case always in a non-impactful and sustainable way. The vins de reserve are kept in large barrels, while the malolactic fermentation is always carried out. All vinifications take place exclusively in steel cuve to preserve the typical fruity characteristics of the terroir de la Marne. Aging on the lees for 48 or 60 months. Cedrick’s wines have a clearly classic approach and are far from market cycles and trends. The same blend at the origin of the Cuvée SA Selection is obtained from an almost equivalent tripartition of champenoise varieties: 1/3 Pinot noir, and 1/3 respectively of Menieur and Chardonnay as rarely happens in these parts. Small productions, craftsmanship pushed to the extreme and an “old” style.

Production method
Fermentation takes place in steel tanks; the vinification is carried out with the use of malolactic fermentation; at least 48 months of stay on the lees and at least 3 months of rest after disgorgement.

Tasting notes
Yellow color with salmon notes. Notes of small fruits, citrus and minerality on the nose. On the straight palate, fine and persistent perlage, it finds greater amplitude on the finish.
Possible combinations
This Champagne goes well with shellfish and fish starters, seafood platters, salmon. Both as an aperitif and with first or second courses.
