History
Founded in 1899, Assailly is a historic family-run Champagne house in the Côte des Blancs, specializing in Blanc de Blancs production. Located in Avize, one of the most renowned Grand Cru villages, Assailly is known for its dedication to Chardonnay, enhancing the terroir’s unique chalky minerality and finesse.

Production method
After gentle pressing, the must ferments in stainless steel to preserve fruit freshness. The second fermentation takes place in the bottle following the Méthode Champenoise, with at least 4 years of aging on the lees before disgorgement, adding finesse and elegance to the wine.
