Production Method
The hand-harvested grapes from the estate’s oldest vineyards are destemmed, crushed, and fermented in 30 hl oak tronco-conic vats with frequent pump-overs. Malolactic fermentation occurs in slightly toasted 20 hl “Mittelberger” barrels, where the wine rests for 18 months on its fine lees. Subsequently, the wine is aged in the bottle for an additional 18 months before release.
