Description
History
Sylvain Pataille is a renowned vigneron based in Marsannay, Côte de Nuits, Burgundy. Since 1999, he has been cultivating about 12.5 hectares of vineyards following organic and biodynamic practices, with a minimalist approach in the cellar to best express the terroir. The Bourgogne Rouge is one of his entry-level labels but reflects the high quality and attention to detail that characterize his wines.

Production method
- Viticulture: Organic and biodynamic cultivation; manual harvest.
- Vinification: Whole cluster fermentation without added sulfites, with maceration of about three weeks in stainless steel or fiberglass tanks.
- Aging: Maturation in used barriques for about two years.

- 12.5% vol.
Tasting notes
- Color: Bright purple-red.
- Aroma: Fresh cherry aromas, with notes of red fruit and herbal nuances.
- Taste: Fresh and vibrant, with delicate tannins and a pleasant savoriness that adds volume to the palate.
Possible pairings
Pairs well with pasta dishes with meat sauce, white meats like hunter-style rabbit, and soft cheeses. Also excellent with woodcock innards pâté.
