Description
History
Domaine Chevrot, located in the southern part of the Côte de Beaune, represents the authentic family and peasant reality of Burgundy. Active since 1830 in a historic agricultural estate dating back to 1798, the winery is now managed by brothers Pablo and Vincent Chevrot, both trained at the Beaune School of Oenology.
Since 2008, all production has been certified organic, but the Domaine is also committed to environmental sustainability, adopting natural practices such as the use of green manure and horse ploughing.
Chevrot wines are distinguished by an intense style, with explosive and precise fruit, faithfully reflecting the spirit of the terroir of Maranges and Santenay. However, sometimes one can perceive some “rusticities” that come from a less careful interpretation of these soils. They offer great potential for evolution and more than reasonable prices, embodying the style and tradition of Burgundy.

Production method
In Burgundy, the Pinot Noir winemaking process follows a strict specification to enhance the characteristics of the grape. The grapes are harvested manually, with selection in the vineyard, followed by pressing and fermentation in oak vats for about 10-15 days. The wine is then transferred to French oak barrels for refinement and malolactic fermentation, which lasts on average 12 to 18 months. During this period, the wine is tasted to monitor its development. After aging in the bottle, the wine is ready for sale.

Tasting notes
Dark ruby color with purple reflections. The nose detects fragrances of ripe red fruit, such as cherries and raspberries, accompanied by subtle spicy, mineral and wet soil notes. On the palate, the tannins are firm yet velvety, creating a silky texture that delicately envelops the palate. The structure of the wine is rounded and perfectly balanced, with a long persistence of fruity and spicy flavors that linger on the finish.

This wine is perfect for accompanying red meats, mature cheeses and mushroom dishes.
