Description
History
The land and the cellar of Campo alla Sughera in Bolgheri were taken over by the Knauf family about 20 years ago, around the year 2000. The family comes entrepreneurially from another sector but has a history in the German winemaking field for over half a century. The approach is to obtain quality wines with a strong identity in the growing landscape of Bolgheri. The estate covers approximately 16.5 hectares of land in a privileged position, with excellent exposure to the sun and jagged by sea winds. Even in the cellar, attention to quality is in first place: the principles of gravity are used to avoid stressing the grapes in any stage of production.

Production method
The grapes are harvested by hand and in crates according to the principle of low yields, demanding but capable of obtaining satisfactory results. The grapes are immediately taken to the cellar and while still fresh they are destemmed and pressed. The gravitational cellar, the only one in Bolgheri and among the few in all of Tuscany, allows you to “not stress” the grapes during each single step of production. The vinification takes place in stainless steel and the wine then rests for 12 months in oak barrels before being bottled, and then another 6 months in the bottle before being placed on the market.

Tasting notes
Intense and impenetrable ruby red colour. On the nose notes of ripe fruit such as cherry, marasca cherry, raspberry, blackberry and blueberry, with herbaceous notes of eucalyptus and mint, minerality and spices such as tobacco, black pepper, vanilla and sandalwood. In the mouth the taste is full, enveloping, soft and warm. The final part of the sip reveals a fresh acidity and ripe tannins, with a good flavor probably due to the influence of the sea. Campo alla Sughera “Adèo” is a Bolgheri that focuses on fruity notes and a pleasant drinkability.
Possible combinations
Based on these characteristics, it can also be drunk by the glass, especially for those who love this kind of wine. In combination we see it very well with red meat dishes, such as grilled meat or even more complex game dishes.
