History
Alessandro Sala, founder of the winery, has achieved his goal of producing quality wines without polluting himself, the environment and final consumers. By using disease-resistant grape varieties, it was possible to minimize the use of pesticides and other harmful chemicals. This sustainable approach preserves consumer health and the integrity of the environment. Alessandro Sala undertakes to disseminate knowledge on resistant vines to encourage their use among producers and protect the environment. His vision is based on ecology, ethics and the art of living transparently.

Production method
The harvested grapes are separated from the bunches to preserve the berries, using open rollers. Subsequently, the musts are gently pressed and clarified by low temperature cooling. Fermentation takes place in barriques. After fermentation, the wine is kept in barriques together with the yeasts, undergoing frequent mixing until bottling.

Tasting notes
Greenish yellow. The scents have fruity, floral notes and subtle tropical hints. On the palate, the wine is flavourful, characterized by excellent acidity and has an overall rich and dense taste. Persistence is extraordinarily long.
Possible combinations
It goes perfectly with dishes based on fish, shellfish and white meats. It is particularly suitable for Asian cuisine and spicy dishes. It can also be appreciated as an aperitif.
