Description
History
The Zyme winery, located in the heart of Valpolicella Classica, precisely in the municipality of San Pietro in Cariano, was born from a history that has roots in an era in which the land was still cultivated following traditions. Founded by Celestino Gaspari, who started as a cellarman, became a consultant and later a wine producer, the company follows a philosophy that focuses on the balance between man and nature, promoting a harmonious and profitable collaboration. The thirty hectares of owned vineyards, distributed in different areas of the Verona area and the province of Vicenza, reflect the diversity of the territory, with its microclimates and unique characteristics linked to each parcel. These vineyards are grown using sustainable agronomic practices.

Tasting notes
Intense ruby red color with garnet nuances. On the nose, aromas of ripe cherries, morello cherries and dried plums, which gradually introduce spicy sensations evocative of sweet tobacco, liquorice, leather, mint and white pepper. The entry into the mouth is enveloping and at the same time savory, maintaining the same aromatic complexity perceived on the nose, with excellent persistence.
Possible combinations
