Description

History
Founded in 1880, Maison Joseph Drouhin is one of the most important and historic wine producers in Burgundy. The Clos des Mouches is a 14-hectare vineyard located at the southern end of the Beaune appellation area, planted equally with Pinot Noir and Chardonnay. The name “Clos des Mouches” derives from the bees (“mouches à miel”) that once populated the area.

Grapes used

  • 100% Chardonnay

Production method

  • Harvest: Manual harvesting of grapes at optimal ripeness.
  • Vinification: Traditional fermentation in wooden vats with temperature control.
  • Aging: Maturation in French oak barrels for a period between 16 and 18 months, with a percentage of new barrels ranging from 20% to 25%.

Alcohol content

  • 13.5% vol.

Tasting notes

  • Color: Bright straw yellow with golden highlights.
  • Aroma: Complex notes of white flowers on the nose, followed by aromas of dried fruits like toasted hazelnuts and almonds. With aging, hints of white truffle, honey, and nutmeg may develop.
  • Taste: The palate offers liveliness and complexity, with an elegant structure and long aromatic persistence.

Possible pairings
Ideal with fish-based dishes, such as pike quenelles, Bresse poultry with truffle, and crayfish risotto.
