Description
History
Founded in 1880, Maison Joseph Drouhin is one of the most important and historic wine producers in Burgundy. The Clos des Mouches is a 14-hectare vineyard located at the southern end of the Beaune appellation area, planted equally with Pinot Noir and Chardonnay. The name “Clos des Mouches” derives from the bees (“mouches à miel”) that once populated the area.

Production method
- Harvest: Manual harvesting of grapes at optimal ripeness.
- Vinification: Traditional fermentation in wooden vats with temperature control.
- Aging: Maturation in French oak barrels for a period between 16 and 18 months, with a percentage of new barrels ranging from 20% to 25%.

- 13.5% vol.
Tasting notes
- Color: Bright straw yellow with golden highlights.
- Aroma: Complex notes of white flowers on the nose, followed by aromas of dried fruits like toasted hazelnuts and almonds. With aging, hints of white truffle, honey, and nutmeg may develop.
- Taste: The palate offers liveliness and complexity, with an elegant structure and long aromatic persistence.
Possible pairings
Ideal with fish-based dishes, such as pike quenelles, Bresse poultry with truffle, and crayfish risotto.
